Time and geological transformations gave the soils around the ancient Basilicata volcano as well as those surrounding ones, the necessary climatic conditions in order that the precious vineyard's grapes can acquire through maturation , those particular characteristics which make Aglianico del Vulture a unique product, deeply connected to its territory and not repeatable in any other place. But this is not enough: the way, from the grapes to the bottle, is still far away. Here the men skill comes into the game, which must realize all those necessary processes to transform grapes into wine.
The Aglianico distinctive characteristics come, over all, from a requisites series as well as from fundamentals of winegrowing techniques: all requirements that are capable to affect those which will be the final quality results of the grapes and, to follow, of the wine. Among these, the production per ha. (60/70 ql. per hectar), the production per plant (1,5 kg.per plant), the grapes sanitary conditions, the maturation degree, the harvest and the wine-making techniques. Aglianico, as every red wine, is the result of its must alcoholic fermentation together with its components dispersion: the grape's solid elements , in particular skins and seeds. During maceration the dispersion of these components , gives the red wine individual elements such as colour,structure body, taste and flavour. Therefore, maceration is a qualifying phase for the future of a red wine.
